Chamomile Fizz

Feeling fancy? Cheers to spring with this herbal and floral fizz! Use Sunset Hills Virginia Gin to give this cocktail an extra little oomph, or try our smooth Deep Run Virginia Vodka for a more neutral flavor. Citrusy, bright, and light, the lemon juice pairs spectacularly with the Chamomile-Riesling Reduction for a springtime floral flavor. Don’t worry if you’re not a tea drinker — the flavor is very subtle. If you’re looking for a mouthwatering cocktail, give this one a shake.



  • 1/2 oz. Chamomile – Riesling Reduction

    • 750 ml. Bottle Riesling White Wine
    • 2 bags Chamomile Tea
    • 1 Cup Sugar
  • 3/4 oz. Fresh Lemon Juice

  • 1/4 oz. Aperitivo Liqueur

  • Topped with Club Soda

  • Fresh Mint to Garnish


  • Chamomile-Riesling Reduction: Add bottle of wine to a medium size pot. Heat on med-low until volume is reduced by 2/3 (approx. 8 oz) Remove from heat and steep bags of chamomile tea for 10 mins. Remove tea bags and add sugar. Mix completely and allow it to cool to room temperature. Store in refrigerator. Shelf life: 7 days

  • Add Sunset Hills Gin, chamomile-Riesling reduction, lemon juice, Aperitivo and bitters to a shaker half-filled with ice.

  • Shake for approximately 30 seconds.

  • Strain into a chilled cocktail glass with ice.

  • Top with club soda.

  • Garnish with mint.
